Asian Noodles With Beef And Snap Peas
- 10 oz hokkien noodles
- 1 tbsp peanut oil
- 1 lb rump steak, thinly sliced
- 1 None red onion, finely sliced
- 2 cloves garlic, crushed
- 1 tsp grated ginger
- 1/2 tsp black pepper
- 1 bunch broccolini, thinly sliced
- 1 None red pepper, seeded, thinly sliced
- 1/4 cup oyster sauce
- 2 tbsp light soy sauce
- 1 tbsp sweet soy sauce
- 1 tsp sugar
- None None sugar snap peas, trimmed
- None None basil leaves, to serve
- Cook noodles following packet instructions. Set aside.
- Heat oil in large wok on medium. Stir-fry beef in 2 batches, 2-3 minutes each, until browned. Return all beef to wok with onion, garlic, ginger and pepper. Stir-fry 1 minute. Add broccolini and pepper and stir-fry 1-2 minutes.
- To make the sauce combine the oyster sauce, soy sauces, and sugar in a small bowl and whisk to combine. Add sauce to wok and bring to simmer.
- Add drained hot noodles and snap peas, stir-frying 2-3 minutes, until vegetables are almost tender. Serve sprinkled with basil leaves.
