Chicken Quesadillas With Guacamole
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 None small red onion, finely chopped
- 1/4 tsp cayenne pepper
- 2 tsp ground cumin
- 1 None medium red pepper, finely chopped
- 1 None medium green pepper, finely chopped
- 18 oz rotisserie chicken, shredded
- 8 None large flour tortillas
- 8.5 oz Cheddar cheese, grated
- None None FOR THE GUACAMOLE
- 1 tbsp finely chopped fresh cilantro
- 2 None large avocados, peeled, pitted, roughly chopped
- 2 tbsp lime juice
- 1/2 None red onion, finely chopped
- 1 None large tomato, deseeded, finely chopped
- None None sour cream and shredded iceberg lettuce, to serve
- Heat olive oil in a large frying pan over medium heat. Sweat garlic and onion, stirring, until onion has softened. Add spices and peppers. Cook, stirring, until peppers have softened. Remove from heat and stir in chicken.
- Arrange 4 tortillas on a flat work surface and sprinkle with cheese. Distribute chicken mixture between tortillas then sprinkle with remaining cheese. Top with remaining tortillas.
- Lightly oil a large frying pan or grill plate and place over medium heat. Cook quesadillas, in batches, until golden brown on both sides. Cover to keep warm.
- Meanwhile, place guacamole ingredients in a medium bowl and mash with a fork to combine.
- Serve quesadillas, cut into quarters, with guacamole, a dollop of sour cream and shredded iceberg lettuce.
