Blueberry Streusel Cake
- 3/4 c. sugar, divided
- 1/4 c. softened margarine
- 1 tsp. grated lemon rind
- 1 egg
- 1 1/2 c. plus 1 Tbsp. flour, divided
- 1/2 tsp. baking soda
- 1/2 c. plain yogurt
- 2 c. fresh blueberries
- 1 tsp. ground cinnamon
- 1/8 tsp. allspice
- 1 tsp. powdered sugar
- Combine 1/2 cup sugar, margarine, lemon rind and egg; beat at medium speed for 5 minutes.
- Combine 1 1/2 cups flour and the soda; add to egg mixture at low speed.
- Pour batter into a 9-inch round pan.
- Combine remaining 1/4 cup sugar, 1 tablespoon flour, blueberries, cinnamon and allspice; tossing gently.
- Spoon over batter, leaving 1/2-inch border.
- Bake at 350u0b0 for 45 minutes, or until lightly browned.
- Cool 20 minutes.
- Sprinkle with powdered sugar.
- Makes 10 servings.
