Spaghetti With Tuna And Olive Sauce
- 500 g dried spaghetti
- 1 tbsp olive oil
- 1 None onion, peeled and finely chopped
- 2 x 400 g cartons chopped tomatoes
- 1 tbsp sugar
- 2 x 120 g cans tuna in spring water, drained and flaked
- 1 None red chilli, seeds removed and chopped
- 85 g pitted black olives, sliced
- 20 g capers
- 1 tbsp chopped parsley, plus extra leaves to granish
- 100 g sun dried tomatoes, chopped
- Cook the pasta in boiling salted water according to the package directions. Drain.
- Meanwhile, heat the oil in a large deep skillet on medium heat. Add the onion and saute for 2-3 mins. Add the tomatoes and sugar and mix well. Bring to a boil.
- Add the tuna, chili pepper, olives, capers, chopped parsley and sun-dried tomatoes. Simmer for 8-10 mins. Serve over the pasta. Garnish with the parsley leaves.
