Grilled Cod With Mango Salsa
- 2 tbsp chopped fresh cilantro leaves
- 1 None lime, juiced
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 6 None skin-on cod fillets
- None None For the Salasa
- 1 None mango, peeled, stoned, finely chopped
- 2 tbsp fresh cilantro leaves, roughly chopped
- 1 None small shallot, finely sliced
- 2 None bird's-eye chilies, finely chopped
- 2 tsp olive oil
- 1 tsp red wine vinegar
- 1/2 tsp sugar
- In a small bowl, combine cilantro, lime juice, oil and garlic. Add the fish, turning to coat. Marinate, covered, in the fridge for 20 mins.
- In a small bowl, combine all the salsa ingredients.
- Preheat a grill on high. Cook fish for 3-4 mins each side, until flesh flakes easily when tested with a fork. Serve with the salsa.
