Ham, Cheese And Veggie Fritters
- 2 cups self-rising flour
- 1/4 tsp baking soda
- 1 1/2 cups milk
- 1 None egg
- 2 tbsp butter, melted
- 2 oz shaved ham, finely chopped
- 1/2 cup canned corn kernels
- 1 small carrot, finely grated
- 1 small zucchini, finely grated
- 1 cup crumbled feta cheese
- 1/2 cup grated Cheddar cheese
- None None Vegetable oil, to grease
- None None Mixed salad, to serve
- Sift flour and baking soda into a large bowl. Whisk milk, egg and butter in a medium bowl. Add to flour mixture. Stir until just combined. Add ham, corn, grated vegetables and cheeses; mix well.
- Heat a large nonstick skillet on medium heat. Brush with a little oil to grease.
- For each patty, spoon 1/3 cup batter into pan. Cook, 2 at a time, for 1-2 mins, or until golden underneath and bubbles appear on surface. Turn; cook for a further 1-2 mins, or until golden.
- Transfer patties to a heatproof plate. Cover with foil to keep warm. Serve with salad.
