Ham, Cheese And Veggie Fritters

  1. Sift flour and baking soda into a large bowl. Whisk milk, egg and butter in a medium bowl. Add to flour mixture. Stir until just combined. Add ham, corn, grated vegetables and cheeses; mix well.
  2. Heat a large nonstick skillet on medium heat. Brush with a little oil to grease.
  3. For each patty, spoon 1/3 cup batter into pan. Cook, 2 at a time, for 1-2 mins, or until golden underneath and bubbles appear on surface. Turn; cook for a further 1-2 mins, or until golden.
  4. Transfer patties to a heatproof plate. Cover with foil to keep warm. Serve with salad.
