Juanita'S Sicilian Meat Roll
- 3/4 c. soft bread crumbs
- 1/2 c. tomato juice
- 2 eggs, beaten
- 2 tsp. parsley, snipped
- 1 onion, chopped fine
- 1 grated carrot (optional)
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. each salt and pepper
- 1 clove garlic, minced
- 2 lb. lean ground beef
- 8 slices boiled ham, sliced thin
- 1 1/2 c. shredded Mozzarella cheese
- 3 slices Mozzarella, halved diagonally
- Combine bread crumbs, tomato juice, eggs, parsley, onion, carrot, oregano, salt, pepper and garlic.
- Add to beef and mix thoroughly.
- Pat out meat on foil or waxed paper to a rectangle, about 12 x 10-inches.
- Leaving a border of an inch around edges, put the ham slices, then sprinkle the Mozzarella.
- Starting at the short end, roll the meat mixture, using the foil to lift.
- Seal the edges.
- Place the roll, seam side down in a 13 x 9 x 2 baking pan. Bake at 350u0b0 for 1 hour and 15 minutes.
- The center will be pink because of the ham.
- Place cheese wedges on top and return to oven until cheese melts.
- Makes 8 servings.
