Turkey And Lemongrass Spring Rolls

  1. In a large nonstick wok or frying pan, heat oil over high heat. Stir-fry turkey and lemongrass for 5-7 mins, until browned and cooked through. Let cool then mix with onions, mint, chili sauce, fish sauce, lime zest, lime juice and garlic.
  2. Working with 1 sheet at a time, dip rice paper into warm water until softened slightly. Transfer to a clean work surface, top with lettuce and filling. Fold over sides and roll up to enclose. Repeat with remaining rice paper and filling.
  3. Serve with extra sweet chili sauce for dipping.
