Turkey And Lemongrass Spring Rolls
- 2 tsp oil
- 1 lb ground turkey
- 2 stalks fresh lemongrass, trimmed, chopped
- 2 None spring onions, finely chopped
- 1 tbsp fresh mint leaves, finely chopped
- 2 tbsp sweet chili sauce, plus extra to serve
- 1 tbsp fish sauce
- 1 None lime, zested and juiced
- 1 clove garlic, minced
- 18 sheets rice paper
- 1/2 head iceberg lettuce, shredded
- In a large nonstick wok or frying pan, heat oil over high heat. Stir-fry turkey and lemongrass for 5-7 mins, until browned and cooked through. Let cool then mix with onions, mint, chili sauce, fish sauce, lime zest, lime juice and garlic.
- Working with 1 sheet at a time, dip rice paper into warm water until softened slightly. Transfer to a clean work surface, top with lettuce and filling. Fold over sides and roll up to enclose. Repeat with remaining rice paper and filling.
- Serve with extra sweet chili sauce for dipping.
