Pork Tenderloin Wrapped In Bacon And Zucchini
- 1 1/2 lb pork tenderloin
- 8 slices bacon
- 1 None zucchini, cut into thin strips with a vegetable peeler
- 2 tbsp oil
- 2 None small onions, peeled and cut into wedges
- 7 oz tagliatelle
- 5.25 oz cherry tomatoes
- 2/3 cup white wine
- 3/4 cup heavy cream
- 6 sprigs fresh thyme
- Preheat oven to 300u0b0F. Wrap pork alternately with bacon and zucchini. Heat oil in a large ovenproof pan. Place pork in pan seam side down and sear all over. Add onion wedges and saute briefly. Transfer to oven and roast for 18-20 mins. Remove pork from roasting pan, wrap in foil and let rest for 10 mins.
- Cook tagliatelle in boiling salted water until al dente.
- Meanwhile, cook tomatoes in roasting pan for 2-3 mins then add wine and cream. Add thyme and simmer for about 5 mins. Season. Drain pasta and toss with sauce. Slice pork and serve with pasta.
