Stuffed Pizza Wreath
- 1 packet pizza dough mix
- 3 tbsp olive oil
- 2/3 lb zucchini, diced
- 2/3 lb eggplant, diced
- 2/3 lb red peppers, diced
- 1 tsp paprika
- 5 stems oregano, leaves removed and chopped
- 1/3 cup tomato puree
- 4 oz mozzarella, torn
- Heat oven to 450u0b0F. Prepare the pizza dough according to package directions then roll out to a large rectangle (14 x 10 inches) and place on a lined sheet tray.
- Heat oil in a saucepan and saute the zucchini, eggplant and peppers for about 5 minutes. Season with salt and pepper and add the paprika and oregano. Remove from the heat and allow to cool.
- Spread the tomato puree on the dough and top with vegetables and mozzarella, leaving a 1 1/2 inch gap at the edge. Roll up the dough and shape into a wreath then bake for 20-25 minutes.
