Ham, Zucchini And Corn Bread
- 1/2 cup self-rising flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup polenta, plus 2 tsp extra
- 4 oz grated aged Cheddar cheese
- 2 oz finely grated zucchini
- 1/2 cup canned corn, drained
- 1 None spring onion, thinly sliced
- 2 None large eggs, at room temperature
- 3/4 cup milk
- 1/2 cup butter, melted
- 3.5 oz shaved ham
- Preheat oven to 350u0b0F. Grease and line an 8x4 inch loaf pan with parchment paper.
- Sift flour, baking powder and salt into a bowl. Add polenta, cheese, zucchini, corn and onion. Make a well in the center. Whisk eggs, milk and butter together then pour into flour mixture. Gently fold until just combined. Distribute 1/2 of the batter between prepared recesses. Top with ham. Pour remaining batter over top. Sprinkle with extra polenta. Bake for 40-45 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool.
- Cut into slices to serve.
