Ham, Zucchini And Corn Bread

  1. Preheat oven to 350u0b0F. Grease and line an 8x4 inch loaf pan with parchment paper.
  2. Sift flour, baking powder and salt into a bowl. Add polenta, cheese, zucchini, corn and onion. Make a well in the center. Whisk eggs, milk and butter together then pour into flour mixture. Gently fold until just combined. Distribute 1/2 of the batter between prepared recesses. Top with ham. Pour remaining batter over top. Sprinkle with extra polenta. Bake for 40-45 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool.
  3. Cut into slices to serve.
