Bean And Mushroom Fajitas

  1. Heat oil in a large deep frying pan over medium heat. Saute onion for 3-4 mins, until tender. Add garlic and spices. Cook for 1 min, until fragrant. Stir in beans and tomato paste. Cook, stirring, for 1 min. Add tomatoes, pepper and mushrooms. Bring to a boil then reduce heat to low and simmer for 8-10 mins, until thickened.
  2. Spoon bean mixture onto warm tortillas. Top with mixed greens and shredded cheese. Serve with sour cream.
