Pancake Quesadillas With Guacamole
- 1 cup flour
- 1/2 cup milk
- 4 None medium eggs
- None pinch salt
- 4 tbsp sunflower oil
- 4 tbsp fresh parsley leaves, chopped
- 4 None tomatoes, sliced
- 4 None spring onions, trimmed and finely sliced
- 1 None yellow pepper, deseeded and finely diced
- 2 oz Monterey Jack cheese, grated
- 2 None ripe avocados, stones removed
- None None juice of 1 lemon
- 1 clove garlic, crushed
- 1 None green chili, deseeded and finely chopped
- Preheat the oven to 400u0b0F. To make the pancakes, mix the flour, milk, eggs, and salt together into a batter. Heat the oil in a frying pan, add a quarter of the batter and shake the pan so that it spreads out. Sprinkle with parsley and flip after 2-3 mins when golden. Cook the other side for 1-2 mins until golden and repeat to make 4 pancakes. Place 2 pancakes on a baking sheet. Top with half of the tomatoes, spring onions, pepper and cheese then place a second pancake on top. Bake for 12-15 mins.
- Meanwhile, to make the guacamole, scoop the avocado into a bowl and mash with the lime juice, garlic and chili pepper and season to taste. Remove the pancakes from the oven and slice into wedges. Serve with the guacamole.
