Blackberry Crumble
- 3 cups flour
- 1/4 tsp cinnamon
- 1 3/4 cups sugar
- 1 tsp vanilla extract
- 19 tbsp butter
- None pinch salt
- 1/4 cup blackberry jam
- 2/3 lb blackberries
- For the pastry dough, mix the flour, cinnamon, sugar, vanilla, butter and a pinch of salt in a bowl and rub the butter in with your fingers until crumbly.
- Preheat the oven to 325u0b0F. Grease and flour a 4 x 13 inch pan and press 2/3 of the dough into the bottom and sides to make a pastry base. Refrigerate.
- For the blackberry mixture, heat the jam in a saucepan over low heat then remove and cool for 5 mins. Mix in the blackberries then set aside.
- Lay a sheet of parchment paper over the chilled pastry base and fill it with dried beans. Bake for 10-15 mins then remove the beans and paper. Fill with the blackberry mixture, top with remaining dough crumbs then bake for 35 mins. Cool on a wire rack for at least 6 hours.
