Quick Bacon And Cheese Macaroni
- 12 oz macaroni
- 1 lb broccoli, trimmed and chopped
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 4 slices bacon, cut into 1 inch pieces
- 2 cloves garlic, crushed
- 1 1/4 cups heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup grated Cheddar cheese
- Cook pasta in a large saucepan of boiling salted water according to package directions. Add broccoli 1 min before end of cooking time; drain. Return to pan to keep warm.
- Meanwhile, heat oil in a large skillet on medium heat. Add onion, bacon and garlic and cook, stirring, until bacon is crisp. Add cream and cook, stirring, until the sauce thickens slightly. Stir in 1/2 the Parmesan cheese.
- Preheat the broiler to high.
- Add the sauce to the pasta; stir to combine. Transfer the mixture to a greased 2 quart baking dish. Sprinkle with Cheddar cheese and remaining Parmesan cheese. Broil until cheese is lightly browned.
