Olive And Parmesan Loaf

  1. Lightly grease an 8 x 4-inch loaf pan. Mix 1 cup warm water, milk and oil in a medium bowl. Sprinkle with yeast. Let stand for 5 mins, until foamy.
  2. Sift flour and salt into a large bowl. Stir in the Parmesan and olives. Add yeast mixture. Mix to form a soft dough. Turn out onto a lightly floured board. Knead for 10 mins, until dough is smooth and elastic.
  3. Place in a lightly greased bowl. Cover with a tea towel. Let stand in a warm place until doubled in size (about 45 mins).
  4. Preheat the oven to 400u0b0F. Punch down dough with fist to release gas. Knead for a few mins. Divide dough in half. Knead each piece until smooth. Shape into rounds. Place side by side in loaf pan. Cover with a tea towel. Let stand in a warm place until doubled in size (about 30 mins).
  5. Bake for 30-35 mins, until loaf sounds hollow when tapped. Transfer to a wire rack to cool.
