Red Wine And Chocolate Cake

  1. Preheat oven to 375u0b0F. Lightly grease a 9 inch round cake pan pan and line the base and sides with parchment paper. For the batter, beat the butter and sugar together with an electric hand mixer until light and fluffy. Add the eggs, one at a time, beating well after each addition. Sift the flours and cocoa powder together, then gently fold into the butter mixture alternating with the wine and water. Pour the batter into the prepared pan and bake for 1 hour or until a skewer comes out clean. Cool in the pan for 5 mins, then transfer to a wire rack to cool completely.
  2. Meanwhile, for the ganache, combine the chocolate and cream in a medium saucepan. Stir over low heat, until smooth. Cool for 30 mins, until the mixture thickens to a spreadable consistency. Spread on the tops and sides of the cooled cake. Slice and serve with the whipped cream.
