Fish With Beet Salsa
- 16 None baby potatoes
- 5 oz green beans, trimmed, cut into 1 inch pieces
- 1 (15 oz) can sliced beets, drained, chopped
- 2 tbsp finely chopped fresh mint leaves
- 3 None spring onions, thinly sliced
- 2 tsp lemon or lime juice
- 2 tbsp vegetable or olive oil
- 4 None firm white fish fillets
- None None lime or lemon wedges, to serve
- Place potatoes in a large saucepan and cover with cold water. Bring to a boil. Boil for 10-12 mins, or until tender, adding green beans for last 2 mins. Drain.
- Combine beets, green beans, mint, onions and lemon juice in a medium bowl. Cover and set aside.
- Heat oil in a medium heavy-bottomed frying pan over medium heat. Cook fish for 2-3 mins per side, or until cooked to your liking. Season to taste.
- Serve fish with beet salsa, potatoes and lime wedges.
