Fish With Beet Salsa

  1. Place potatoes in a large saucepan and cover with cold water. Bring to a boil. Boil for 10-12 mins, or until tender, adding green beans for last 2 mins. Drain.
  2. Combine beets, green beans, mint, onions and lemon juice in a medium bowl. Cover and set aside.
  3. Heat oil in a medium heavy-bottomed frying pan over medium heat. Cook fish for 2-3 mins per side, or until cooked to your liking. Season to taste.
  4. Serve fish with beet salsa, potatoes and lime wedges.
