Cinnamon Buns

  1. To make the dough, gently heat the milk to lukewarm and dissolve the yeast. Set aside. Sift the flour into a bowl then add 1/3 cup sugar, 1/3 cup butter, the egg and a pinch of salt. Add the yeast and milk mixture. Knead until smooth. Cover and set aside to proof for 30-40 mins in a warm place.
  2. Meanwhile, melt the remaining butter then stir in the nuts. In a separate bowl, mix the remaining sugar with the cinnamon. Set both aside.
  3. On a floured work surface, knead the dough again then roll out into a 16 x 20 inch rectangle. Spread the nut mixture over top, reserving 2-3 tbsp for decoration. Next, add the grated marzipan and cinnamon sugar and press the toppings in lightly. Fold the dough in 1/2 and cut into 12 - 1 1/2 inch strips. Form each strip into a spiral then thread the loose end into the middle of the bun. Place the buns on a baking tray lined with parchment paper.
  4. Preheat the oven to 400u0b0F. Brush the buns with the rest of the butter and nuts, cover and let proof for 10 mins in a warm place. Bake for about 14 mins. Remove from the oven, allow to cool on a wire rack then serve.
