Beef Curry With Banana Sambal

  1. Heat oil in a large saucepan on medium heat. Cook beef, in batches, for 2 mins or until seared. Transfer to a heatproof plate.
  2. Add onion to pan; cook and stir for 3-4 mins or until soft. Add curry paste; cook and stir for 30 seconds or until fragrant.
  3. Return beef to pan with tomato, carrot and stock. Bring to a boil. Reduce heat to low; simmer, covered, for 1 hour 15 mins or until beef is tender, stirring occasionally.
  4. Add green beans; simmer, covered, for 2-3 mins or until beans are just tender. Season.
  5. For the banana sambal, combine banana, coconut and chili pepper in a small bowl.
  6. Heat chapattis according to package directions. Serve curry with banana sambal, chapattis and yogurt.
