Beef Curry With Banana Sambal
- 1 tbsp vegetable or peanut oil
- 2 lbs beef stew meat, cut into 1-inch pieces
- 1 large onion, finely chopped
- 1/2 cup store-bought Madras curry paste
- 1 can (14 oz) diced tomatoes
- 1 large carrot, coarsely chopped
- 2 cups beef stock
- 6 oz green beans, cut into 1-inch lengths
- 6 None store-bought chapattis
- None None Plain yogurt, to serve
- None None FOR THE BANANA SAMBAL
- 1 medium banana, sliced
- 2 tbsp flaked coconut
- 1 None fresh medium red chili pepper, seeded and finely chopped
- Heat oil in a large saucepan on medium heat. Cook beef, in batches, for 2 mins or until seared. Transfer to a heatproof plate.
- Add onion to pan; cook and stir for 3-4 mins or until soft. Add curry paste; cook and stir for 30 seconds or until fragrant.
- Return beef to pan with tomato, carrot and stock. Bring to a boil. Reduce heat to low; simmer, covered, for 1 hour 15 mins or until beef is tender, stirring occasionally.
- Add green beans; simmer, covered, for 2-3 mins or until beans are just tender. Season.
- For the banana sambal, combine banana, coconut and chili pepper in a small bowl.
- Heat chapattis according to package directions. Serve curry with banana sambal, chapattis and yogurt.
