Smoked Salmon And Avocado Sushi Rolls
- 2 oz sushi rice, rinsed
- 2 tbsp sushi seasoning
- 4 sheets nori, halved
- 3.5 oz smoked salmon
- 1/2 None small avocado, pitted, thinly sliced
- None None soy sauce, to serve
- Combine rice and 3/4 cup water in a medium saucepan. Bring to a boil then reduce heat and simmer, covered, for 12-15 mins. Remove from heat and let stand, covered, for 10 mins.
- Spread rice out over a baking tray. Drizzle sushi seasoning evenly over rice then turn rice with a spatula to mix seasoning in. Let cool completely.
- Lay out a sheet of nori on a bamboo mat, shiny-side down, with short side facing upwards.
- Using wet fingers, gently press 1/2 cup rice over sheet, leaving a 3/4 inch strip at 1 end. Make a ridge along middle of rice with your fingers. Top with salmon and avocado. Roll up tightly using the bamboo mat. Repeat with remaining nori, rice and filling.
- Wrap in plastic wrap and chill until firm. Cut each roll into 8 pieces. Serve with soy sauce.
