Pork Sausage And Mushroom Fettuccine
- 1 tbsp vegetable or olive oil
- 1 lb thick pork sausages
- 1 lb button mushrooms, halved
- 2 cloves garlic, minced
- 18 oz fettuccine
- 2 oz baby spinach
- 1 None lemon, zested and juiced
- 2 None spring onions, thinly sliced
- None None mixed greens, to serve
- None None shaved Parmesan cheese, to serve
- Heat oil in a deep frying pan over medium-high heat. Add sausages and cook for 10 mins, or until browned and cooked through. Set aside to rest for 5 mins then thinly slice on a bias. Add mushroom and garlic to pan and cook for 3 mins, or until soft. Return sausage to pan.
- Meanwhile, cook pasta in boiling salted water for 10 mins, or until tender. Drain. Toss with sausage mixture, spinach, lemon zest, lemon juice and onions. Warm over low heat until heated through. Season. Serve with mixed greens and Parmesan cheese.
