Caraway Seed And Sea Salt Bread
- 4 tsp active dry yeast
- 4 cups spelt flour
- 1/2 tsp sugar
- 1 tsp salt
- 2 tbsp sea salt
- 2 tbsp caraway seeds
- Dissolve the yeast in 1/2 cup lukewarm water. Mix the yeast water with the flour, sugar, salt and 1 cup of water using the dough hook of a hand mixer until you have a smooth dough. Wrap the dough with plastic wrap and leave it overnight in a cool place (or in the fridge, but you'll need to let it stand for 20 mins at room temperature).
- Unwrap the dough and put it onto a lightly-floured work surface. Form it into 8 small loaves and put them on parchment-lined baking sheets. Cover and leave them for about 30 minutes.
- Preheat the oven to 425u0b0F. Sprinkle the loaves with water, sea salt and caraway seeds. Bake the loaves for 10 mins and then turn the oven down to 325u0b0F and bake them for another 10-15 mins. If the loaves sound hollow when you tap them, they're done. Remove from the oven, cover with a tea towel and leave them to cool.
