Fava Bean, Baby Beet And Goat Cheese Salad
- 1/2 cup granulated sugar
- 3 bunches baby beets, trimmed, washed, leaves reserved
- 9 oz sourdough bread, torn
- 2 tbsp olive oil
- 14 oz fava beans, blanched, peeled
- 3.5 oz prosciutto, thinly sliced
- 4 oz soft goat cheese
- In a medium saucepan, combine sugar and 6 cups water. Stir over low heat until sugar dissolves. Add beets and simmer, uncovered, for 40-45 mins, until tender.
- Preheat oven to 350u0b0F. Arrange bread on a baking tray and drizzle with oil. Season. Bake for 8-10 mins, until golden brown.
- Remove beets from liquid, let cool then peel. Continue simmering liquid for 5-7 mins, until syrupy.
- In a large salad bowl, combine beets, reserved leaves, fava beans, sourdough croutons and prosciutto. Crumble cheese over top. Drizzle with syrup and season to taste.
