Microwave Pot Roast(Yields 6 Servings)
- 3 lb. beef chuck roast
- 1 (16 oz.) can whole tomatoes (undrained)
- 1 medium onion, sliced and separated into rings
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- 1/8 tsp. cayenne pepper
- 1 stick cinnamon
- 2 medium white potatoes, quartered
- 4 medium carrots, cut into 2-inch pieces
- 2 stalks celery, cut into 2-inch pieces
- Place roast in 3-quart casserole.
- In small bowl, mix tomatoes, onion, garlic powder, cayenne and pepper.
- Add cinnamon stick. Pour over roast.
- Cover.
- Microwave on High for 5 minutes. Microwave 30 more minutes at 1/2 power.
- Add remaining ingredients. Re-cover.
- Microwave at 1/2 power for 30 to 45 minutes or until roast and vegetables are tender.
- Let stand for 10 minutes.
- Serve with biscuits.
