Mustard-Crusted Sirloin Steaks With Sautéed Zucchini

  1. Preheat the oven to 400u0b0F. Beat the butter until pale and creamy then add the breadcrumbs and mustard. Season lightly.
  2. Heat 1 tbsp oil in a large heavy-bottomed frying pan and sear 1/2 the steaks over high heat for about 2 mins on each side. Repeat with the remaining steaks. Spread the mustard crust over the top of the steaks then transfer to a baking dish and cook in the oven for 5-7 mins until the crust is golden. Remove from the oven, cover with foil and let rest for 5 mins.
  3. Meanwhile, heat the remaining oil and saute the onion and garlic for 5 mins. Add the zucchini and cook gently for 3-4 mins. Add the stock and simmer for 2-3 mins. Season to taste. Serve the steaks with the sauteed zucchini.
