Ginger Beef

  1. Heat 1 tbsp peanut oil in a wok or large frying pan over high heat. Stir-fry beef for 1-2 mins, until browned. Set aside. Cover to keep warm.
  2. Add remaining peanut oil. Stir-fry onion, almonds, ginger and garlic for 2-3 mins, until onion is tender. Add broccoli, oyster sauce, soy sauce and sesame oil. Stir fry 1-2 mins, until broccoli is just tender. Return beef to pan. Add water chestnuts, basil and spring onions. Stir-fry for 1-2 mins, until heated through.
  3. Garnish with shredded spring onion and chopped peanuts. Serve with vermicelli rice noodles.
