Maple Baked Winter Fruits
- 1 None orange
- 1 cup dry white wine
- 3 None red apples
- 3 None pears
- 2 tbsp unsalted butter, softened
- 1/2 cup pure maple syrup
- 1 lb rhubarb, trimmed and cut into 5-inch lengths
- 1 tub (8 oz) mascarpone cheese or creme fraIche
- Preheat the oven to 350u0b0F.
- Using a vegetable peeler, remove peel from orange in one long strip, if possible. Squeeze juice from orange. Place juice, peel and wine in a large shallow baking dish.
- Halve apples crosswise; trim the bottoms slightly to give them a flat surface to sit on. Halve the pears lengthwise; trim the rounded skin sides slightly, to give them a flat surface to sit on. Place apples and pears in baking dish, trimmed-side down.
- Rub softened butter generously over apples and pears; drizzle with maple syrup. Cover dish with foil. Bake 20 mins. Add rhubarb. Bake, covered, a further 10 mins. Remove foil; bake a further 5 mins or until all fruit is tender.
- Combine mascarpone with 2 tbsp of the cooking liquid from the baked fruit.
- Serve baked fruit with mascarpone.
