Lamb, Feta And Winter Squash Frittata
- 4 None lamb sausages
- 1/2 lb frozen chopped spinach, thawed, excess liquid removed
- 3/4 lb winter squash, peeled, cut into 2/3 inch pieces
- 3.5 oz char-grilled marinated peppers, thinly sliced
- 2 None spring onions, finely chopped
- 6 oz feta cheese, cubed
- 8 None eggs, at room temperature
- 1 2/3 cups heavy cream
- 2 oz parmesan cheese, shredded
- Preheat oven to 350u0b0F. Grease and line a 10 x 6 inch baking pan with parchment paper. Heat a large frying pan over medium heat, lightly coat sausages in oil then brown for 8 mins, or until cooked. Remove from pan and slice. Combine with spinach, winter squash, pepper, onion and feta then transfer to prepared dish.
- Whisk eggs, cream and 1 oz parmesan then pour over sausage mixture. Stir to combine then sprinkle with remaining parmesan. Bake for 35-40 mins, or until just set in the center. Let cool in pan for 10 mins then transfer to a wire rack to cool slightly. Cut into 12 pieces and serve.
