Icebox Fruit Cake

  1. In a large pan, put your crushed crackers.
  2. Have nuts in small pieces.
  3. Cut candied fruit in pieces also.
  4. Add sugar, butter, lemon extract and cinnamon.
  5. This takes a lot of mixing together by hand.
  6. Juice from the fruit will hold this together.
  7. After mixing well, place in a Bundt cake pan, sprayed with Pam.
  8. Press cake in pan firmly.
  9. Trim top of cake with nuts/fruit.
  10. Put in refrigerator overnight in cake pan, then you can remove from pan onto cake plate.
  11. Keep refrigerated.
