Icebox Fruit Cake
- 1 lb. English walnuts
- 2 lb. pecans
- 1/2 lb. candied cherries
- 1/2 lb. candied pineapple
- 1 box figs
- 1 c. brown sugar
- 1 c. melted butter
- 1/2 tsp. cinnamon
- 1/2 tsp. lemon extract
- 1 box graham crackers
- 1 box dark raisins
- 1 box white raisins
- In a large pan, put your crushed crackers.
- Have nuts in small pieces.
- Cut candied fruit in pieces also.
- Add sugar, butter, lemon extract and cinnamon.
- This takes a lot of mixing together by hand.
- Juice from the fruit will hold this together.
- After mixing well, place in a Bundt cake pan, sprayed with Pam.
- Press cake in pan firmly.
- Trim top of cake with nuts/fruit.
- Put in refrigerator overnight in cake pan, then you can remove from pan onto cake plate.
- Keep refrigerated.
