Simple Gravy

  1. Remove the roast meat from the roasting pan and keep warm. Place the pan (ensure that it is flame-proof) on top of the stove, over a medium heat. Bring the pan drippings to a boil then reduce the heat and simmer until all juices in the pan have evaporated and only the fat remains. Pour off the excess fat from the pan leaving approximately 6 tbsp of fat.
  2. Leave the the roasting pan on a medium heat and add the flour, then stir until combined with the fat.
  3. Reduce the heat to low and continue stirring until the flour is of a good brown consistency. Do not allow to burn.
  4. Remove the roasting pan from the heat and add the stock all at once, stirring constantly. Continue stirring until the flour and stock have combined.
  5. Return the roasting pan to a medium heat and stir until the sauce boils and thickens. Season, then simmer the gravy, uncovered,for 3 mins, stirring occasionally.
