Ham And Sage Burgers With Sautéed Gnocchi And Tomatoes
- 1 lb ground beef
- 3 slices white bread, soaked in cold water then excess water squeezed out
- 1 None egg
- 1/3 cup pine nuts, toasted and roughly chopped
- 4 slices Parma ham
- 4 leaves fresh sage
- 3 tbsp oil
- 1 lb fresh gnocchi
- 1/3 lb cherry tomatoes, halved
- 3-4 tbsp Marsala wine
- 3/4 cup heavy cream
- None None Parmesan, shaved, for garnish
- Mix the ground beef, bread, egg and pine nuts. Season then form into 4 flat patties. Top each with 1 slice of ham and 1 sage leaf and secure with a toothpick.
- Heat 2 tbsp oil in a frying pan and sear the burgers, turning, for 5 mins. Meanwhile, heat the remaining oil in a separate frying pan and saute the gnocchi and tomatoes for 5-8 mins. Remove the burgers from the pan and keep warm. Add the Marsala and cream to the pan juices and simmer for 3-5 mins. Season.
- To serve, arrange the burgers, gnocchi and tomatoes on serving plates. Garnish with the pan sauce and shaved Parmesan.
