Gnocchi With Caper Sauce
- 2 tbsp olive oil
- 1 lb ground beef
- 1 clove garlic, peeled and finely diced
- 10 None spring onions, cut into 2/3 inch long slices
- 1 tbsp all-purpose flour
- 1 2/3 cups 2% or whole milk
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 3.5 oz capers
- 1 tsp butter
- 1 lb fresh gnocchi
- None None fresh flat-leaf parsley, for garnish
- Heat the oil in a large frying pan and brown the ground beef until crumbly. Season then add the garlic and 9 spring onions and saute for 5 mins. Sprinkle in the flour and cook for 30 seconds. Add the milk and cream, bring to a boil and simmer for 5 mins. Add 1/2 the Parmesan and 1/2 the capers and season.
- To finish, melt the butter in a separate frying pan and cook the gnocchi for 5 mins, until golden brown all over. Distribute between 4 serving plates and top with the sauce. Sprinkle with the remaining Parmesan, capers and spring onion and garnish with parsley.
