Tart De Amandoas - Portuguese Almond Cake
- 3 medium eggs
- 1 1/4 cups sugar
- 10 tbsp butter, melted
- 1 tsp vanilla extract
- 2 large oranges, juiced and zested
- 3/4 cup all purpose flour
- 3 oz ground almonds
- 1 1/2 tsp baking powder
- 4 oz raspberries
- 4 oz powdered sugar
- Heat oven to 350u0b0F. In a bowl, whisk the eggs and sugar for 3 minutes.Thoroughly mix in the melted butter, vanilla extract and 2/3 cup of orange juice. Fold in the flour, almonds, orange zest, baking powder and pinch of salt then transfer to a greased 9 inch tart ring and bake for 20-25 minutes. Remove and allow to cool on a wire rack.
- When cooled, distribute the raspberries loosely over the cake. Mix the powdered sugar and 2-3 tblsp orange juice until smooth, transfer to a piping bag and pipe onto the cake. Leave to set for 20 minutes before cutting into slices and serving.
