Apple Chelsea Buns
- 2 1/4 cups self-rising flour
- 4 tbsp chilled butter, chopped, plus 2 tbsp extra melted
- 1 cup milk, plus 1 tbsp extra
- 1/3 cup brown sugar
- 1/2 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1 None green apple, finely sliced
- 1/2 cup raisins
- -1 None Glaze
- 1/3 cup powdered sugar
- 1 drop pink food coloring
- Preheat oven to 350u0b0F. Lightly grease and line an 8 inch springform pan with parchment paper.
- Sift flour and 1/4 tsp salt together into a large bowl. Cut in chilled butter until mixture resembles coarse breadcrumbs. Make a well in the center and pour in 1 cup milk. Quickly mix into a soft, sticky dough. Turn out onto a lightly floured work surface and gently press together. Roll out to a form an 8x10 inch rectangle.
- Brush dough with melted butter and sprinkle with brown sugar and spices. Arrange apple and raisins over top, leaving a 3/4 inch border on 1 long side. Roll up lengthwise firmly. Place seam side down on a cutting board and cut into 6 slices. Arrange in prepared springform pan and brush with extra milk. Bake for 25-30 mins, until golden brown and base sounds hollow when tapped. Transfer to a wire rack to cool.
- To make the glaze, sift powdered sugar into a bowl. Slowly add 1 tbsp hot water, mixing until smooth and runny. Tint with food coloring then drizzle over buns. Serve.
