Cheese And Apple Pizza

  1. Mix yeast, 1/2 tsp sugar and 2/3 cup lukewarm water and set aside for 10 mins. Mix flour and semolina in a bowl. Add yeast mixture and 2/3 cup lukewarm water and knead until smooth. Cover and let rest for 5 mins then add 1/2 tsp salt and oil and knead again. Divide into 4 equal pieces and form into balls. Cover and keep in a warm place for about 30 mins.
  2. Preheat oven to 425u0b0F. Mix creme fraiche (or sour cream, if using) with remaining sugar and season to taste. Roll out dough balls on a floured work surface into 10 inch discs and place on baking sheets lined with parchment paper. Distribute 1/4 of the creme fraiche, onion, apple, thyme and cheese over top of pizzas and bake for 10-12 mins. Serve drizzled with honey and garnished with thyme.
