Cheese And Apple Pizza
- 3 1/2 tsp fresh yeast, crumbled or 1 3/4 tsp active dry yeast
- 1 tsp granulated sugar
- 3 1/4 cup all-purpose flour
- 1/3 cup durum wheat semolina
- 4 tbsp olive oil
- 1 2/3 cup creme fraiche or sour cream
- 3 None red onions, peeled and finely chopped
- 2 None apples, cored, quartered and sliced
- 8 sprigs fresh thyme + extra reserved to garnish
- 10.5 oz Parmesan cheese, grated
- 4 tbsp acacia honey, to garnish
- Mix yeast, 1/2 tsp sugar and 2/3 cup lukewarm water and set aside for 10 mins. Mix flour and semolina in a bowl. Add yeast mixture and 2/3 cup lukewarm water and knead until smooth. Cover and let rest for 5 mins then add 1/2 tsp salt and oil and knead again. Divide into 4 equal pieces and form into balls. Cover and keep in a warm place for about 30 mins.
- Preheat oven to 425u0b0F. Mix creme fraiche (or sour cream, if using) with remaining sugar and season to taste. Roll out dough balls on a floured work surface into 10 inch discs and place on baking sheets lined with parchment paper. Distribute 1/4 of the creme fraiche, onion, apple, thyme and cheese over top of pizzas and bake for 10-12 mins. Serve drizzled with honey and garnished with thyme.
