Three Grain Bread
- 1 c. sifted all-purpose flour
- 1/2 c. rye flour (light or dark)
- 1 1/2 c. whole wheat flour
- 2 c. skim milk
- 1/4 c. honey
- 3/4 c. Canola oil
- 2 Tbsp. sugar
- 1 Tbsp. salt
- 1/3 lb. fresh yeast
- 2 1/4 to 2 1/2 c. all-purpose flour
- In a large bowl, put the first 3 ingredients and set aside. Heat together the skim milk, honey, Canola oil, sugar and salt in a large pan and warm to lukewarm.
- Then break the yeast into the liquid and mix by hand until it becomes smooth.
- Pour this mixture into the flour in the large bowl.
- Gradually add the remaining 2 1/4 to 2 1/2 cups flour, just enough to make a moderately stiff dough.
- Turn onto a floured surface and knead until smooth.
- Place dough in greased bowl, turning once.
- Cover; let rise once until doubled.
- Form three loaves; put into greased bread pans.
- Let rise to double in size.
- Bake at 375u0b0 for 30 to 40 minutes.
