Tuna With Coriander Dressing

  1. To make the coriander dressing, blend or process coriander, garlic and fresh cilantro until smooth. Rub 1/2 over tuna. Cover and chill for 1 hour. Whisk remaining coriander dressing with olive oil and lemon juice. Reserve.
  2. Boil, steam or microwave potatoes until tender. Drain and slice thickly.
  3. Oil a grill pan and place over medium-high heat. Cook tuna to your liking.
  4. Combine potatoes, onion, pecans and spinach. Distribute between serving plates and top with tuna. Drizzle with reserved coriander dressing.
