Green Olive Chicken Pizza
- 1 x 12 inch prepared pizza crust
- 1.25 oz pimento-stuffed green olives
- 2 None anchovy fillets, chopped, drained
- 2 tsp capers, drained
- 2 tbsp flat-leaf parsley, chopped
- 1/2 tsp finely grated lemon zest
- 2 tsp vegetable or olive oil
- 2.5 oz cooked chicken meat, shredded
- 1/2 None red pepper, roasted, chopped
- 2.75 oz Monterey Jack cheese, grated
- None None Salad, to serve
- Preheat oven to 450u0b0F. Place pizza crust on a baking sheet and bake for 5 mins.
- Meanwhile, put olives, anchovy, capers, parsley and lemon zest in a food processor. Process until finely chopped. Add oil; process until well combined.
- Spread mixture over pizza base. Top with chicken, chopped pepper and cheese. Bake for 12-15 mins or until golden brown. Serve with salad.
