Pork With Cabbage And Carrot Noodles
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tsp sesame oil
- 1/4 cup sesame seeds, plus 1 tbsp extra, toasted, to serve
- 4 None boneless pork chops
- 2 tbsp vegetable oil
- 1 None white onion, cut into thin wedges
- 7 oz savoy cabbage, shredded
- 1 None large carrot, cut into matchsticks
- 15.5 oz fresh rice noodles, soaked in boiling water for 2 mins, drained
- Combine soy sauce, mirin and sesame oil. Set aside.
- Place sesame seeds on a large plate. Coat pork evenly on both sides with sesame seeds. Heat 1 tbsp oil in a large frying pan over medium-high heat. Cook pork for 8-4 mins per side, or until brown and cooked to your liking. Let rest, covered, for 5 mins. Cut in 1/2.
- Meanwhile, heat a wok or large frying pan over high heat. Add remaining oil and swirl to coat surface. Add onion. Stir-fry for 2 mins. Add cabbage, carrot and 2 tbsp water. Stir-fry for 2 mins, or until tender. Add noodles and sauce. Toss until heated through. Distribute between serving plates.
- Top noodles with pork. Serve sprinkled with extra sesame seeds.
