Stuffed Baby Potatoes

  1. Preheat the oven to 350u0b0F. Line 2 large baking pans with parchment paper. Cook potatoes in a large saucepan of boiling water for 15 mins or until tender. Rinse under cold running water; drain well. Set aside to cool.
  2. Cut each potato in half lengthwise. Use a teaspoon to scoop out flesh leaving a shell. (Be careful not to break skin). Place potato shells on prepared pans. Place potato flesh in a large bowl with butter; mash until smooth. Add 3/4 cup of the cheese, ham, mustard, sour cream, sweet chili sauce and chives. Season with salt and pepper.
  3. Spoon potato mixture into shells; sprinkle with remaining cheese.
  4. Bake for 15 mins or until golden. Serve garnished with additional chives.
