Peaches With Honey Oat Topping
- 2 cans (16 oz each) peach slices in natural juice, drained
- 2 tsp finely grated lemon peel
- 2 tsp vanilla extract
- 3 tbsp cold butter, chopped
- 1/4 cup honey
- 1/4 cup flour
- 3/4 cup rolled oats
- 1/3 cup shelled pistachio kernels, coarsely chopped
- None None Powdered sugar, to dust
- Preheat the oven to 350u0b0F. Lightly grease a 1-quart baking dish.
- Pat peaches dry with paper towels. Combine the peaches, lemon peel and vanilla extract in a medium bowl. Spoon the mixture into a prepared dish.
- In a medium bowl, using your fingertips, rub the butter, honey, flour, oats and pistachios together until the mixture resembles coarse crumbs. Sprinkle over the peach mixture.
- Bake for 25 mins, or until the topping is golden and the fruit is heated through. Let stand for 5 mins.
- Dust with powdered sugar and serve.
