Peaches With Honey Oat Topping

  1. Preheat the oven to 350u0b0F. Lightly grease a 1-quart baking dish.
  2. Pat peaches dry with paper towels. Combine the peaches, lemon peel and vanilla extract in a medium bowl. Spoon the mixture into a prepared dish.
  3. In a medium bowl, using your fingertips, rub the butter, honey, flour, oats and pistachios together until the mixture resembles coarse crumbs. Sprinkle over the peach mixture.
  4. Bake for 25 mins, or until the topping is golden and the fruit is heated through. Let stand for 5 mins.
  5. Dust with powdered sugar and serve.
