Zucchini And Apple Chutney
- 1 2/3 lbs zucchini, unpeeled, grated coarsely
- 2 tbsp kosher salt
- 2 None Granny Smith apples, peeled, cored and coarsely chopped
- 2 medium onions, chopped coarsely
- 1 cup golden raisins
- 2 cups cider vinegar
- 2 tsp brown mustard seeds
- 1 tsp ground coriander
- 1 cup granulated sugar
- Place zucchini in medium non-metallic bowl. Sprinkle with salt, mix well. Cover and let stand for 2 hours.
- Rinse and drain zucchini mixture well. Squeeze excess water from zucchini. Drain on paper towels.
- Combine zucchini, apple, onion, raisins, vinegar and spices in medium saucepan on medium heat. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, about 20 mins or until mixture is pulpy. Add sugar; stir on high heat, without boiling, until sugar dissolves. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, about 15 mins or until relish is thick.
- Pour into hot sterilized jars and seal immediately. Store in a cool dry place. Once opened, store in the refrigerator.
