Fiery Hot Chili
- 2 lb. chili meat
- 1/2 c. cooking oil
- 1 1/2 c. water
- 1 (8 oz.) can tomato sauce
- 2 small onions, chopped
- 1 medium green pepper, chopped
- 5 to 6 cloves garlic, chopped
- 1 tsp. oregano
- 1 tsp. ground cumin
- 4 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. sugar
- 4 to 5 medium jalapeno peppers, chopped
- cayenne pepper
- In a large skillet, braise meat in 1/4 cup oil until brown. Transfer meat to large kettle or electric slow cooker, leaving liquid in skillet.
- Add water and tomato sauce to meat, cook over low heat.
- Saute onion, green pepper and garlic in remaining 1/4 cup of oil and liquid in skillet.
- Add remaining dry ingredients. Simmer about 30 minutes, then transfer to kettle.
- Simmer about 2 hours.
- Dip off grease that settles on top.
