Sabayon With Poached Peaches
- 2 cups sugar
- 1 None vanilla bean, split and seeds scraped
- 1 None cinnamon stick
- 4 None peaches
- None None Biscotti, to serve (optional)

- 8 None egg yolks
- 3/4 cup sugar
- 1/2 cup Champagne or sweet white wine
- Place 2 cups water, sugar, vanilla bean and cinnamon stick in a large saucepan on high heat. Bring to a boil, stirring.
- Add peaches. Reduce heat to low; simmer, without stirring, for 10-15 mins until just tender. Remove peaches and cool. Peel skin and discard.
- For the sabayon, place egg yolks, sugar and Champagne in a large heatproof bowl. Whisk until well combined. Place bowl over a pan of simmering water. Whisk mixture constantly for 8-10 mins, or until the sabayon has thickened and doubles in volume.
- Divide poached peaches among serving bowls. Top with sabayon. Serve with biscotti, if desired.
