Baked Apricot Chicken With Sautéed Cabbage And Garlic Bread
- 4 tbsp olive oil
- 4 None chicken breast, skinned
- 8 slices French bread
- 2 None garlic cloves, peeled
- 2 tbsp apricot jam
- 1/2 cup white cheddar cheese, shredded
- 1 tbsp butter
- 1 None onion, peeled and chopped
- 10 cups cabbage, trimmed and shredded
- 1 sprig marjoram, to garnish
- Heat 2 tbsp of the oil in a frying pan and saute the chicken over a medium heat for 10 -15 mins, turning occasionally, until browned and almost cooked through. Transfer to a shallow baking dish. Preheat the oven to 400u0b0F. Rub the slices of bread with one halved garlic clove and brush with the rest of the oil. Place on a baking sheet.
- Crush the second garlic clove and mix with the apricot jam. Brush all over the chicken. Sprinkle with the grated cheese and bake for 8-10 mins or until the cheese is golden and bubbling. Bake the garlic bread at the same time, turning once until crisp and golden.
- Meanwhile, heat the butter in a deep frying pan and cook the onion for 5 mins. Add the cabbage and cook over a medium heat for 5-6 mins until just tender, stirring occasionally. Season with salt and freshly ground black pepper.
- Serve the chicken garnished with marjoram and with the cabbage and garlic bread.
