Vanilla Panna Cotta With Grapefruit
- 1 1/4 cups milk
- 1 tsp vanilla extract
- 2 tbsp granulated sugar
- 1 tbsp powdered gelatin, bloomed in 1/2 cup ice water
- 3/4 cup vanilla yogurt
- 1/2 tsp cornstarch, dissolved in 1 tbsp water until smooth
- 2 None ruby grapefruit, peeled, cut into segments, juice reserved
- Lightly oil 4 - 3 oz molds.
- In a saucepan, bring milk, vanilla and 1 tbsp sugar to a boil. Remove from heat and whisk in bloomed gelatin, stirring until dissolved. Let cool slightly. Whisk in yogurt then distribute between prepared molds. Chill for 3 hours, until set.
- Meanwhile, combine cornstarch slurry with reserved grapefruit juice and remaining sugar. Bring to a boil, stirring. Let cool.
- Turn panna cottas out onto serving plates. Serve with grapefruit and syrup.
