Vanilla Poached Pears With Praline Semifreddo
- 4 None eggs, separated
- 2 1/2 cups granulated sugar + 3 tbsp
- 2 cups heavy cream, whipped to soft-medium peaks
- 7 oz praline, crushed
- 2 None vanilla beans, halved lengthwise
- 6 None pears, peeled, cored
- Line 2 - 32oz loaf pans with parchment paper.
- Beat egg yolks with 2 tbsp granulated sugar until thick and pale. In a separate bowl, whisk egg whites with 1 tbsp sugar to stiff peaks. Fold whites into yolk mixture then gently fold in whipped cream. Fold in 5.25 oz praline. Divide between prepared pans and freeze for 4-6 hours, until frozen.
- Meanwhile, for the poached pears, bring remaining sugar, vanilla beans and 8 cups water to a boil, stirring to dissolve sugar. Reduce heat to a simmer. Add pears, cover with a piece of parchment paper trimmed to fit the pan and simmer for 15 mins, or until pears are just tender. Remove from heat and allow to cool in syrup.
- Place a pear and 2 slices semifreddo on each serving plate. Sprinkle with remaining praline.
