Vanilla Poached Pears With Praline Semifreddo

  1. Line 2 - 32oz loaf pans with parchment paper.
  2. Beat egg yolks with 2 tbsp granulated sugar until thick and pale. In a separate bowl, whisk egg whites with 1 tbsp sugar to stiff peaks. Fold whites into yolk mixture then gently fold in whipped cream. Fold in 5.25 oz praline. Divide between prepared pans and freeze for 4-6 hours, until frozen.
  3. Meanwhile, for the poached pears, bring remaining sugar, vanilla beans and 8 cups water to a boil, stirring to dissolve sugar. Reduce heat to a simmer. Add pears, cover with a piece of parchment paper trimmed to fit the pan and simmer for 15 mins, or until pears are just tender. Remove from heat and allow to cool in syrup.
  4. Place a pear and 2 slices semifreddo on each serving plate. Sprinkle with remaining praline.
