Chorizo And Bread Salad
- 7 oz cherry tomatoes, halved
- 1 tbsp plus 2 tsp vegetable or olive oil
- 3 None chorizo sausages, thinly sliced
- 4 None thick slices sourdough bread, cubed
- 2 heads baby Romaine lettuce, leaves separated
- 1/2 cup mixed pitted olives
- 1 cup crumbled feta cheese
- 1 tbsp red wine vinegar
- 2 tbsp basil leaves
- 1 tbsp chopped flat-leaf parsley
- Preheat the oven to 425u0b0F. Line a baking pan with parchment paper. Place tomatoes on prepared pan. Drizzle with 2 tsp of the oil. Bake for 8-10 mins or until softened slightly.
- Meanwhile, cook chorizo in a large skillet on medium heat for 5 mins or until crisp. Drain on paper towels. Add bread to pan; cook and stir for 2-3 mins or until browned and crisp.
- Combine lettuce, chorizo, olives and feta in a large bowl. Drizzle with combined vinegar and remaining 1 tbsp oil. Sprinkle with basil and parsley; toss to combine. Serve topped with bread.
