Chorizo And Bread Salad

  1. Preheat the oven to 425u0b0F. Line a baking pan with parchment paper. Place tomatoes on prepared pan. Drizzle with 2 tsp of the oil. Bake for 8-10 mins or until softened slightly.
  2. Meanwhile, cook chorizo in a large skillet on medium heat for 5 mins or until crisp. Drain on paper towels. Add bread to pan; cook and stir for 2-3 mins or until browned and crisp.
  3. Combine lettuce, chorizo, olives and feta in a large bowl. Drizzle with combined vinegar and remaining 1 tbsp oil. Sprinkle with basil and parsley; toss to combine. Serve topped with bread.
