Fusilli And Meatballs In Tomato Sauce
- 1 tbsp sunflower oil
- 4 None raw sausages
- 1 None red pepper, deseeded and chopped
- 1 None onion, peeled and finely diced
- 400 g fusilli tricolore
- 1 tin (425ml) corn kernels
- 1 tin (425ml) peeled tomatoes
- Pinch None chilli powder
- 50 g tortilla chips
- Heat oil in a pan. Press the sausage meat out of its casings, form into small balls and fry for 4-5 mins. Cook pasta in boiling salted water according to package directions.
- Meanwhile, remove meatballs from the pan, add peppers and onion and saute for 4 mins. Add the corn and tomatoes to the sauce, bring to a boil, add chili powder and season to taste.
- Drain fusilli and return to the saucepan. Add the meatballs and sauce and stir through. Serve garnished with crumbled tortilla chips.
